These Light & Crispy Maple Roasted Delicata Squash Rings are a simple, delicious side dish with caramelized edges and tender centers, made with just a few ingredients. Perfect for busy weeknights or holiday tables, they’re naturally gluten-free, dairy-free, and vegan.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 lbs total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or rosemary, chopped (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Wash the delicata squash thoroughly, pat dry, and trim off about ¼ inch from both ends.
  3. Slice the squash crosswise into ½-inch thick rings.
  4. Use a small spoon or melon baller to gently remove the seeds and stringy bits from the center of each ring.
  5. In a medium mixing bowl, whisk together maple syrup, olive oil, salt, and black pepper.
  6. Add the squash rings to the bowl and gently toss until every ring is evenly coated.
  7. Arrange the rings in a single layer on the prepared baking sheet, leaving space between each ring.
  8. Roast for 15 minutes, then remove from the oven and carefully flip each ring.
  9. Return to the oven and roast for another 10-15 minutes, until edges are deeply caramelized and centers are tender.
  10. Let the rings rest on the baking sheet for 2-3 minutes, then transfer to a serving platter. Sprinkle with fresh herbs if desired.

Notes

For best results, don’t overcrowd the pan; use two baking sheets if doubling the recipe. Pat squash dry before tossing to ensure crispy texture. Watch the last few minutes closely to prevent burning. Let rings rest after roasting to enhance crispiness.
