These Lightened-Up Caramel Apple Dumplings are a quick and easy dessert that combines tender apples wrapped in flaky crescent roll dough with a lightened caramel sauce made with Greek yogurt. Ready in just 30 minutes, they’re perfect for weeknights or company.

Ingredients

Scale
  • 2 medium apples (Honeycrisp or Fuji recommended)
  • 1 can (8 oz) refrigerated crescent roll dough (reduced-fat optional)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • Pinch of nutmeg
  • 1/4 cup brown sugar, packed
  • 2 tablespoons unsalted butter
  • 2 tablespoons plain Greek yogurt (full-fat or 2%)
  • 1/4 cup water
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8 or 9×9 baking dish with butter or non-stick spray.
  2. Peel and core apples. Cut each apple in half through the equator, then scoop out the core to create a well. Cut each half into 4 wedges (8 pieces total).
  3. In a small bowl, combine 1 tablespoon brown sugar, 1/2 teaspoon cinnamon, and a pinch of nutmeg. Stir to combine.
  4. Unroll crescent roll dough and separate into 8 triangles. Press each triangle gently to flatten slightly.
  5. Place an apple wedge at the wide end of each crescent triangle. Sprinkle a little cinnamon sugar mixture over each apple piece. Roll dough around apple, starting at wide end and tucking pointed end underneath. Place seam-side down in prepared dish.
  6. Melt 2 tablespoons butter and brush over tops of dumplings (or drizzle with a spoon).
  7. In a small saucepan over medium heat, combine 1/4 cup brown sugar, 2 tablespoons butter, 2 tablespoons Greek yogurt, and 1/4 cup water. Whisk constantly until butter melts and sugar dissolves (2-3 minutes). Bring to a gentle simmer, then remove from heat. Stir in vanilla extract and a pinch of salt.
  8. Pour caramel sauce around and over dumplings.
  9. Bake for 18-22 minutes until golden brown and caramel is bubbling. Let cool in pan for 5 minutes before serving.

Notes

For best results, use firm apples like Honeycrisp or Fuji. Seal dough seams well to prevent leaking. Watch oven closely as dumplings can burn quickly. For extra caramel, double the sauce recipe and reserve half for drizzling. Can be assembled ahead and refrigerated for up to 24 hours before baking.
