  • 3 medium ripe bananas, mashed
  • 1 cup (240 ml) pumpkin puree
  • 1/2 cup (120 g) sourdough discard, unfed
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup (100 g) packed brown sugar
  • 1/4 cup (56 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  3. In a separate bowl, mash the bananas until smooth with some lumps remaining. Add pumpkin puree, sourdough discard, brown sugar, melted butter, eggs, and vanilla extract. Whisk gently until just combined.
  4. Pour the wet ingredients into the dry ingredients bowl. Fold gently with a spatula until no large streaks of flour remain. Avoid overmixing.
  5. Transfer the batter into the prepared loaf pan and smooth the top evenly.
  6. Bake for 55–65 minutes, starting to check at 55 minutes by inserting a toothpick in the center. It should come out with a few moist crumbs but no raw batter. Tent with foil if the top browns too quickly.
  7. Let the bread rest in the pan for 15 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep the bread tender. Use very ripe bananas for best sweetness and moisture. If bananas or pumpkin puree are very watery, reduce sourdough discard slightly to avoid sogginess. Tent with foil if the top browns too fast. Let the bread rest overnight wrapped to deepen flavors.
