Overnight Pumpkin Spice Oats: Easy Make-Ahead Breakfast

Creamy, make-ahead overnight oats with warm pumpkin spice and a touch of sweetness. Perfect for stress-free hosting or a delicious fall breakfast that tastes like pumpkin pie in a jar.

  • 2 cups (180g) old-fashioned rolled oats
  • 1 cup (240g) 100% pure pumpkin purée
  • 1 ½ cups (360ml) milk of choice (whole milk, oat milk, or almond milk)
  • ½ cup (120g) Greek yogurt (plain)
  • 34 tablespoons (45-60ml) pure maple syrup
  • 2 tablespoons (20g) chia seeds
  • 2 teaspoons pumpkin spice blend (1 tsp cinnamon, ½ tsp ginger, ¼ tsp nutmeg, ¼ tsp allspice, pinch of cloves)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • For serving (optional): chopped pecans or walnuts, extra maple syrup, Greek yogurt, pomegranate seeds, extra pumpkin spice

Instructions

  1. In a large mixing bowl, combine the rolled oats, chia seeds, pumpkin spice blend, and salt. Whisk until evenly distributed.
  2. In a separate bowl or large measuring cup, whisk together the pumpkin purée, milk, Greek yogurt, maple syrup, and vanilla extract until smooth and uniform.
  3. Pour the wet mixture into the dry ingredients. Fold gently with a spatula until every oat is coated. The mixture will be liquid.
  4. Divide the mixture evenly among airtight jars or containers (about 4-5 servings). Leave ½ inch of space at the top for expansion.
  5. Seal the jars and refrigerate for at least 6 hours, preferably 8-12 hours or overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold with desired toppings.

Notes

Use room temperature pumpkin purée to prevent clumping. Taste the mixture before refrigerating to adjust sweetness or spice. For a topping bar, set out bowls of nuts, seeds, dried fruit, and extra yogurt for guests. Oats keep in the fridge for up to 5 days (best within 3 days). Freeze for up to 3 months.
