Perfect Baked Brie in Puff Pastry Recipe with Hot Honey Walnuts

A quick and easy baked brie wrapped in flaky puff pastry, topped with a spicy-sweet hot honey walnut mixture. Perfect for entertaining or a cozy treat.

  • 1 sheet puff pastry (roughly 8x8 inches / 20x20 cm), thawed but still cold
  • 1 wheel brie cheese (8 oz / 225 g), rind left on
  • ½ cup walnuts (50 g), roughly chopped and toasted
  • 3 tablespoons honey (45 ml)
  • ¼ teaspoon chili flakes (optional)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon fresh thyme, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toast the walnuts in a dry skillet over medium heat, stirring frequently for 3-4 minutes until fragrant and lightly golden. Set aside to cool.
  3. In a small bowl, combine honey and chili flakes. Stir well, then toss the toasted walnuts in the mixture until evenly coated. Set aside.
  4. On a lightly floured surface, gently roll the puff pastry sheet into a 10×10 inch (25×25 cm) square to fit the brie comfortably with room to seal.
  5. Place the brie wheel in the center of the pastry. Optionally, spread a thin layer of fig jam or sprinkle fresh thyme over the top.
  6. Fold the pastry up and over the brie, bringing all four corners to the center and overlapping slightly to seal. Press gently to seal the edges well.
  7. Flip the wrapped brie over and place seam-side down on the prepared baking sheet.
  8. Brush the entire pastry with the beaten egg to achieve a golden crust.
  9. Score the top lightly with a sharp knife to allow steam to escape during baking.
  10. Bake for 20-25 minutes until the pastry is puffed and golden brown, watching closely from 18 minutes to avoid burning.
  11. Remove from oven and let rest for 5 minutes to allow the cheese to thicken slightly.
  12. Transfer to a serving plate and spoon the hot honey walnuts over the top before serving.

Notes

Keep puff pastry cold until ready to use to maintain flaky layers. Use egg wash for a shiny golden crust. Toast walnuts before mixing with honey and chili flakes for deeper flavor. Let baked brie rest 5 minutes before slicing to avoid cheese running. Tent with foil if pastry browns too fast.
