  • 1 ¼ cups warm water (300ml, about 110°F)
  • 2 ¼ teaspoons active dry yeast (one packet)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened (226g)
  • ½ cup Buffalo hot sauce (like Frank’s RedHot)
  • ½ cup shredded cheddar cheese
  • 1 tablespoon dry ranch dressing mix
  • 2 tablespoons green onions, finely chopped
  • 10 cups water (2.4 liters)
  • ½ cup baking soda (120g)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt, for sprinkling

Instructions

  1. In the bowl of a stand mixer, combine warm water (110°F), sugar, and active dry yeast. Let sit for 5-10 minutes until frothy.
  2. Add melted butter, salt, and 2 cups of flour. Mix on low speed with dough hook until combined, then gradually add remaining 1 ½ cups flour. Knead on medium-low for 6-8 minutes until smooth and elastic.
  3. Shape dough into a ball, place in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  4. While dough rises, make filling: In a medium bowl, combine softened cream cheese, Buffalo hot sauce, shredded cheddar, dry ranch mix, and green onions. Mix until smooth. Fold in shredded chicken. Cover and refrigerate.
  5. Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper.
  6. Punch down dough and divide into 4 equal pieces. Roll each piece into a 12-inch-long rope, about 1 ½ inches thick. Cut each rope into 12 pieces (1 inch each).
  7. Flatten each piece into a 3-inch disc. Place about 1 ½ teaspoons of filling in the center. Gather edges and pinch tightly to seal. Roll gently to smooth. Place seam-side down on prepared baking sheet. Repeat with remaining dough and filling.
  8. Bring 10 cups of water to a boil in a large pot. Carefully add ½ cup baking soda (it will bubble vigorously). Reduce heat to a gentle simmer.
  9. Working in batches of 5-6 bites, gently drop into simmering water. Cook for 30 seconds per side. Transfer back to baking sheet, spacing 2 inches apart. Repeat with all bites.
  10. Brush each boiled bite with egg wash. Sprinkle generously with coarse sea salt.
  11. Bake for 12-15 minutes until deep golden brown and filling is bubbling slightly. Let cool on baking sheet for 5 minutes before serving.

Notes

Seal the filling tightly to prevent leakage during the baking soda bath. Work in small batches for the bath to avoid overcrowding. Reheat leftovers in a 350°F oven for 5-7 minutes to maintain crispness.
