Ingredients

  • Feta cheese (8 oz / 225 g, crumbled) – preferably sheep’s milk feta
  • Greek yogurt (½ cup / 120 ml, full-fat)
  • Olive oil (2 tbsp / 30 ml, extra virgin)
  • Fresh lemon juice (1 tbsp / 15 ml)
  • Garlic (1 clove, minced)
  • Fresh thyme or oregano (1 tsp, finely chopped, optional)
  • Black pepper (to taste, freshly cracked)
  • Dried figs (1 cup / 150 g, chopped) – Black Mission recommended
  • Water (¾ cup / 180 ml)
  • Brown sugar (¼ cup / 50 g)
  • Lemon zest (1 tsp)
  • Fresh lemon juice (2 tbsp / 30 ml)
  • Cinnamon stick (1, optional)
  • Assorted cured meats (e.g., prosciutto, salami)
  • Variety of crackers and artisan bread slices
  • Fresh fruits (grapes, figs, apple slices)
  • Mixed nuts (almonds, walnuts, pecans)
  • Olives and pickles
  • Fresh herbs (rosemary, thyme) for garnish

Instructions

  1. Prepare the Whipped Feta Dip (10 minutes): In a food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, and minced garlic. Pulse until smooth and creamy, scraping down sides as needed. Stir in fresh thyme or oregano and season with black pepper. Transfer to a serving bowl, drizzle olive oil on top, and chill until serving.
  2. Make the Fig Jam (20-25 minutes): In a small saucepan, combine chopped dried figs, water, brown sugar, lemon zest, lemon juice, and cinnamon stick. Bring to a gentle simmer over medium heat, stirring occasionally. Reduce heat to low and cook until figs soften and mixture thickens (about 15-20 minutes). Remove cinnamon stick and mash figs slightly. Cool before serving.
  3. Assemble the Grazing Table (15-20 minutes): Arrange the whipped feta dip and fig jam bowls spaced apart on a serving board or platter. Fold or roll cured meats and place them on the board. Group crackers and bread slices for easy grabbing. Scatter fresh fruits, nuts, olives, and pickles around dips and meats. Garnish with fresh herb sprigs.

Notes

Use full-fat feta and Greek yogurt for best creamy texture. Pulse in short bursts to avoid pasty dip. Simmer fig jam gently and stir frequently to prevent burning. Serve dips in bowls to avoid soggy crackers. Store dips and jams separately in airtight containers in the fridge for up to 5 days. For dairy-free, substitute Greek yogurt with coconut yogurt and feta with plant-based alternatives.
