  • 1/4 cup bourbon
  • 1/2 cup packed brown sugar

  • 1/4 teaspoon ground cloves (optional)
  • 1 can pineapple rings (about 810 rings), drained
  • Maraschino cherries (optional, about 10)
  • Whole cloves (optional, about 15-20)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the rind in a diamond pattern about 1/4 inch deep.
  3. Insert whole cloves into the centers of the diamond cuts, spacing evenly (optional).
  4. Place ham on the rack in your roasting pan. Tuck pineapple rings over the surface, securing each with toothpicks if needed.
  5. In a small saucepan over medium heat, combine honey, bourbon, brown sugar, Dijon mustard, cinnamon, and ground cloves. Stir until sugar dissolves and mixture bubbles gently, about 5 minutes. Remove from heat.
  6. Brush the glaze generously over the ham and pineapple rings with a basting brush. Save some glaze for later.
  7. Bake the ham for about 1.5 to 2 hours, or until heated through (internal temperature should reach 140°F/60°C if using pre-cooked ham). Baste with additional glaze every 20-30 minutes.
  8. About 30 minutes before done, tuck maraschino cherries into the pineapple rings (optional).
  9. For extra caramelization, broil the ham for 2-3 minutes at the end, watching carefully to avoid burning (optional).
  10. Remove from oven and tent loosely with foil. Let rest for 10-15 minutes before slicing.
  11. Slice between the scored lines or follow the spiral cut, serving with pineapple rings and extra glaze.
