  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 large egg
  • 1 cup (100g) almond flour
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 3 large apples, peeled, cored, and thinly sliced
  • 2 tablespoons maple syrup (real maple syrup)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 4 tablespoons unsalted butter (for glaze)
  • 3 tablespoons pure maple syrup (for glaze)

Instructions

  1. Make the Tart Crust (15 minutes prep + chilling): In a large bowl or food processor, combine all-purpose flour, almond flour, and salt. Add the cold, cubed butter and pulse or cut in with a pastry cutter until the mixture resembles coarse crumbs with some pea-sized bits. Gradually add ice water, 1 tablespoon at a time, just until the dough holds together when pressed. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  2. Prepare the Almond Frangipane (10 minutes): In a mixing bowl, beat softened butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing well. Fold in almond flour and all-purpose flour until smooth. Set aside in the fridge while you prepare the apples.
  3. Slice and Season the Apples (10 minutes): Peel, core, and thinly slice the apples. Toss gently in a bowl with lemon juice, maple syrup, cinnamon, and nutmeg.
  4. Roll Out and Assemble (10 minutes): On a lightly floured surface, roll out the chilled dough to fit your tart pan. Press it into the pan, trimming excess dough. Spread the almond frangipane evenly over the crust. Arrange the apple slices in overlapping circles or a rustic pattern on top of the frangipane.
  5. Bake the Tart (35-40 minutes): Preheat the oven to 350°F (175°C). Bake the tart until the crust is golden and the frangipane is set, about 35–40 minutes. The apples should be tender but still hold their shape.
  6. Make the Maple Brown Butter Glaze (5 minutes): While the tart bakes, melt butter over medium heat in a small saucepan. Keep cooking, stirring frequently, until it turns golden brown and smells nutty (about 3-4 minutes). Remove from heat and stir in maple syrup.
  7. Glaze and Cool (5 minutes): As soon as the tart comes out of the oven, brush the maple brown butter glaze generously over the apples. Let the tart cool in the pan for at least 20 minutes before serving.

Notes

Use medium heat and watch the butter carefully when browning to avoid burning. Chill the dough for at least 30 minutes to ensure flakiness. Brush glaze on while tart is hot for best absorption. For gluten-free, substitute all-purpose flour with gluten-free blend. Vegan adaptations include using vegan butter and flax egg.
