Ingredients

  • Fresh nectarines – 3 medium, thinly sliced

Instructions

  1. Make the crust dough: In a large bowl, combine sifted flour, sugar, and salt. Add cold cubed butter and cut into flour until mixture resembles coarse crumbs with pea-sized bits.
  2. Slowly drizzle in ice water, stirring gently until dough just holds together. Shape into disk, wrap, and chill for at least 30 minutes.
  3. Prepare almond filling: Whisk almond flour, heavy cream, sugar, vanilla extract, and egg yolk until smooth. Refrigerate until ready to use.
  4. Slice nectarines thinly, toss with sugar and cinnamon if using.
  5. Roll chilled dough on lightly floured surface into a 12-inch circle about ⅛ inch thick. Transfer to parchment-lined baking sheet.
  6. Spread almond filling evenly over dough, leaving 2-inch border.
  7. Arrange nectarine slices on top in a single layer, overlapping slightly.
  8. Fold dough edges over fruit, pleating to enclose partially. Brush crust edges with egg wash.
