This small-batch banana bread is designed for a single overripe banana, making it the perfect quick and easy treat for one or two people. It’s tender, sweet, and comes together in under an hour with simple pantry ingredients.

Ingredients

Scale
  • 1 ripe banana (medium to large, very spotty)
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/3 cup granulated sugar
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla extract
  • 3/4 cup all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • Optional: 1/4 cup chopped walnuts, pecans, or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a small loaf pan (5.75 x 3.25 inches) and line with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, mash the banana with a fork until mostly smooth with a few small lumps.
  3. Add melted butter, sugar, room-temperature egg, and vanilla extract to the mashed banana. Whisk until well combined and glossy.
  4. In a small bowl, whisk together flour, baking soda, and salt. If using mix-ins, stir them into the flour mixture.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined—no streaks of flour remain. Do not overmix.
  6. Scrape batter into prepared loaf pan and spread evenly. Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 20 minutes.
  7. Cool in pan for 10 minutes, then lift out using parchment handles and transfer to a wire rack. Cool completely before slicing (at least 30 minutes).

Notes

For best results, use a very ripe banana (heavily speckled or mostly brown). Room-temperature egg is important to prevent butter from solidifying. Pan size is crucial—do not use a standard 9×5 pan. Bread tastes even better on day two. For dairy-free, use coconut oil or plant-based butter. For gluten-free, use a 1:1 gluten-free baking blend.
