A simple, foolproof method for making perfectly crunchy, salty pumpkin seeds in the air fryer in under 15 minutes. This quick snack uses just three ingredients and is perfect for busy weeknights or after-school munchies.

Ingredients

Scale
  • 1 cup (120g) fresh pumpkin seeds
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon (5g) flaky sea salt, plus more to taste
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon cayenne pepper (optional)

Instructions

  1. Prepare the pumpkin seeds: If using fresh seeds, separate them from the pulp and rinse in a colander under cool water. Pat very dry with a clean kitchen towel or paper towels. Let sit for 5-10 minutes to air dry. If using pre-packaged seeds, skip this step.
  2. Season the seeds: In a medium mixing bowl, combine the dried pumpkin seeds, olive oil, and flaky sea salt. Toss until evenly coated. Add any optional spices if desired and mix well.
  3. Preheat the air fryer (optional but recommended): Set air fryer to 350°F (175°C) and let it run empty for 2-3 minutes.
  4. Arrange the seeds in the air fryer basket: Spread the seasoned seeds in a single, even layer in the basket. Do not overcrowd; cook in batches if necessary.
  5. Cook the seeds: Cook at 350°F (175°C) for 5 minutes. Shake the basket or stir the seeds, then cook for another 3-5 minutes, until lightly golden brown and toasty. Watch closely during the last 2 minutes to prevent burning.
  6. Check for doneness: Seeds should be a shade or two darker and feel dry. They will continue to crisp as they cool.
  7. Cool and serve: Transfer seeds to a plate or bowl and spread out to cool completely for 5-10 minutes. Sprinkle with additional sea salt if desired. Serve immediately or store for later.

Notes

For best results, ensure seeds are thoroughly dried before cooking to achieve maximum crunch. Do not overcrowd the air fryer basket; cook in batches if needed. Seeds will continue to crisp as they cool, so remove them when they are a shade lighter than desired. Store in an airtight container at room temperature for up to 2 weeks, or refrigerate for up to 1 month. To refresh crunch, reheat in air fryer at 300°F (150°C) for 2-3 minutes.
