These quick crispy air fryer chicken thighs with garlic herb rub are fast, foolproof, and taste like you spent way more effort than you actually did. The skin gets shatteringly crisp while the meat stays tender and juicy, all in under 30 minutes.

Ingredients

Scale
  • 4–6 bone-in, skin-on chicken thighs (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • Fresh parsley or chives for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels, removing as much moisture as possible. Let them sit on a plate for a few minutes.
  2. In a small bowl, combine garlic powder, dried oregano, dried thyme, dried rosemary, onion powder, paprika, salt, and black pepper. Stir with a fork to break up any clumps.
  3. Drizzle olive oil over the chicken thighs and use your hands to coat each piece evenly. Sprinkle the herb mixture over both sides of each thigh, rubbing it in gently.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Arrange the chicken thighs skin-side down in a single layer in the air fryer basket, making sure they are not touching.
  6. Cook for 12 minutes at 400°F. Do not open the basket during this time.
  7. Using tongs, carefully flip each thigh so the skin side is facing up. Cook for another 8-10 minutes, or until the internal temperature reaches 175-180°F and the skin is deep golden brown and crispy.
  8. Remove the chicken from the air fryer and let it rest on a plate for 5 minutes.
  9. Garnish with fresh parsley or chives and serve with lemon wedges on the side, if desired.

Notes

Pat the chicken dry twice for the crispiest skin. Don’t skip preheating the air fryer. Spray the basket lightly with cooking spray to prevent sticking. Let the chicken come to room temperature for 15-20 minutes before cooking if possible. Use a meat thermometer for best results; chicken thighs are best at 175-180°F. For boneless, skinless thighs, reduce cooking time to 12-14 minutes total. To reheat leftovers, use the air fryer at 375°F for 3-4 minutes.
