  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes, halved

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 3 medium zucchinis, spiralized into noodles
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Prepare the zucchini noodles: Wash and dry the zucchinis. Using a spiralizer, create long noodles and set aside in a colander to drain excess moisture (about 10 minutes).
  2. Heat a large skillet over medium heat. Add 3 tablespoons of butter and melt gently, swirling to coat the pan without browning (about 2 minutes).
  3. Add minced garlic to the melted butter and stir constantly for about 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer. Season with salt, pepper, and crushed red pepper flakes if using. Cook undisturbed for 2 minutes to sear, then flip and cook another 2 minutes until pink and opaque (4-5 minutes total).
  5. Push shrimp to one side of the pan and add halved cherry tomatoes. Cook, stirring occasionally, until tomatoes soften and release juices but keep shape, about 3-4 minutes.
  6. Combine shrimp and tomatoes, add fresh lemon juice and chopped parsley. Stir gently and remove from heat (1 minute).
  7. In a separate pan, heat 1 tablespoon olive oil over medium heat. Add drained zucchini noodles and a pinch of salt. Toss gently for 2-3 minutes until warmed through but still crisp.
  8. Plate zucchini noodles and top with the garlic butter cherry tomato shrimp mixture. Spoon extra buttery sauce over the top and serve.

Notes

Pat zucchini noodles dry before cooking to avoid sogginess. Avoid overcrowding the pan when cooking shrimp to ensure proper searing. Melt butter gently to prevent garlic from burning. Cook zucchini noodles briefly to keep them crisp.
