A quick and easy green bean almondine with garlic, perfect for busy weeknights. This single-pan recipe delivers tender-crisp beans with charred edges, toasted almonds, and a buttery garlic flavor.

Ingredients

Scale
  • 1 pound fresh green beans, ends trimmed
  • 1/3 cup sliced almonds
  • 3 to 4 cloves garlic, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prep your ingredients: Trim the ends off 1 pound of green beans. Slice 3 to 4 garlic cloves thinly. Measure out almonds, butter, and olive oil. Have lemon ready.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1 tablespoon butter. Let it melt and get foamy, about 30 seconds.
  3. Add sliced almonds to the hot pan. Stir constantly for 1 to 2 minutes until golden brown and nutty. Remove almonds to a plate and set aside.
  4. Add remaining 1 tablespoon butter to the pan. Let it melt, then add green beans in a single layer. Let them sit undisturbed for 2 to 3 minutes to char. Toss and cook another 2 to 3 minutes until bright green with brown spots.
  5. Add sliced garlic and stir constantly for 1 minute until fragrant and just starting to turn golden.
  6. Squeeze 1 tablespoon lemon juice over beans. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add toasted almonds back to the pan and toss. Add red pepper flakes if desired.
  7. Serve immediately while hot.

Notes

For best texture, don’t stir beans constantly; let them char. If using frozen green beans, thaw and pat dry thoroughly. Almonds burn quickly, so watch them carefully. Serve immediately for optimal texture.
