Instructions

  1. Prepare the broccoli rice: Wash and dry broccoli florets thoroughly. Pulse in a food processor in 3-4 short bursts until you get rice-sized pieces. If you don’t have a processor, finely chop or grate the broccoli. Set aside. (5 minutes)
  2. Make the honey garlic sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, and grated ginger if using. Set aside. (5 minutes)
  3. Cook the broccoli rice: Heat 1 tablespoon oil in a large skillet over medium heat. Add the broccoli rice, season lightly with salt, and sauté for about 4-5 minutes until tender but still bright green. Transfer to a bowl and cover to keep warm. (6 minutes)
  4. Sauté the shrimp: Add remaining tablespoon oil to the same skillet and increase heat to medium-high. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and just cooked through. Avoid overcrowding the pan; cook in batches if needed. (6 minutes)
  5. Add the sauce: Pour the honey garlic sauce over the shrimp in the skillet. Toss gently to coat, cooking for another 1-2 minutes until the sauce thickens and glazes the shrimp beautifully. Watch closely to prevent burning. (2 minutes)
  6. Assemble the bowls: Spoon broccoli rice into bowls, top with the glazed shrimp. Garnish with sliced green onions, red pepper flakes, and a sprinkle of sesame seeds if desired. (2 minutes)

Notes

If the sauce is too thick or starts to stick, splash a teaspoon of water to loosen it up. Avoid overcooking shrimp to prevent rubbery texture. For gluten-free, swap soy sauce with tamari. Broccoli rice can be substituted with cauliflower rice or finely chopped vegetables.
