Transform your Thanksgiving leftovers into crispy, golden waffles topped with rich gravy. Ready in under 15 minutes, this creative recipe turns leftover turkey and stuffing into a comforting meal that’s way better than a sad sandwich.

Ingredients

Scale
  • 2 cups leftover turkey, shredded or chopped
  • 2 cups leftover stuffing, at room temperature
  • 1 large egg
  • 1 cup leftover gravy, warmed
  • Salt and pepper to taste
  • Optional: leftover cranberry sauce for serving
  • Optional: leftover green bean casserole, chopped
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your waffle iron to medium-high heat.
  2. In a medium bowl, combine 2 cups shredded turkey and 2 cups stuffing. Break up any clumps with a fork.
  3. Crack 1 large egg into the bowl and mix until well combined. The mixture should hold together when squeezed.
  4. Lightly spray the hot waffle iron with non-stick spray.
  5. Scoop about ¾ cup of the mixture onto the center of the waffle iron.
  6. Close the lid and cook for 4-6 minutes until golden brown and crispy.
  7. Carefully remove the waffle with a fork or silicone spatula.
  8. Repeat with remaining mixture, spraying the iron between batches.
  9. While waffles cook, warm the gravy in a small saucepan over medium-low heat.
  10. Serve waffles immediately with warm gravy poured over the top.

Notes

Don’t overmix the batter to avoid gummy waffles. Let the mixture rest for 5 minutes before cooking for better binding. If stuffing is dry, sprinkle with a tablespoon of chicken broth before mixing. For extra crispy waffles, keep them warm in a 200°F oven directly on the rack. These freeze beautifully – cook first, then freeze in a single layer.
