  • 1/3 cup marinara sauce
  • 2 tablespoons ricotta cheese

  • 1 tablespoon grated Parmesan cheese (optional)
  • 2 tablespoons cooked ground beef or Italian sausage (optional)

Instructions

  1. Break 4-5 lasagna noodles into pieces about 2 inches long.
  2. Spoon about 2 tablespoons of marinara sauce into the bottom of a microwave-safe mug (12-16 ounce capacity).
  3. Place 2-3 broken noodle pieces on top of the sauce, pressing them down gently.
  4. Drop about 1 tablespoon of ricotta cheese on top of the noodles. Sprinkle with a pinch of Italian seasoning, salt, and pepper.
  5. Add another tablespoon of marinara sauce, then another layer of 2-3 broken noodles. Press down.
  6. Sprinkle about 2 tablespoons of shredded mozzarella over the noodles.
  7. Repeat layers: add another tablespoon of ricotta, a pinch of seasoning, another tablespoon of sauce, and the remaining noodles. If using cooked meat, add it now.
  8. Top with remaining sauce, ensuring all noodles are covered. Sprinkle remaining mozzarella and Parmesan (if using) on top.
  9. Microwave on high for 2 minutes. Watch closely to prevent overflow; pause if needed.
  10. Let the mug rest for 1-2 minutes to allow noodles to finish absorbing sauce.
  11. Check doneness by piercing a noodle with a fork; it should be tender. If still firm, microwave for another 20-30 seconds and rest again.
  12. Eat straight from the mug.
