  • 2 medium zucchinis, diced or sliced
  • 1 cup uncooked white or brown rice (jasmine recommended)
  • 3 tablespoons garlic butter
  • 2 cups beef broth or water
  • 1 small onion, finely diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: fresh parsley or thyme for garnish

Instructions

  1. Dice the onion and zucchini into bite-sized pieces. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook 5–7 minutes, breaking apart until browned. Season with salt and pepper. Drain excess fat if needed.
  3. Stir in diced onion and garlic butter. Cook 3 minutes until onions soften and garlic is fragrant.
  4. Add zucchini pieces and cook 4-5 minutes until tender-crisp.
  5. Add rinsed rice and beef broth. Stir to combine and ensure rice is submerged. Bring to a gentle boil.
  6. Reduce heat to low, cover skillet with lid, and simmer for about 15 minutes without lifting the lid.
  7. Check rice for doneness; if needed, cook an additional 3-5 minutes covered.
  8. Fluff rice and beef mixture with a fork. Adjust salt and pepper to taste. Sprinkle with fresh herbs if desired.
  9. Serve warm immediately.

Notes

Do not skip browning the beef for flavor depth. Rinse rice to prevent gumminess. Keep heat medium-low when simmering and keep the lid on to ensure fluffy rice. If rice sticks, add a splash of broth. For low-carb, substitute cauliflower rice and adjust cooking times. Optional garnishes include fresh herbs, sour cream, or hot sauce.
