A tropical and spicy frozen margarita featuring sweet pineapple, tequila, and a zesty Tajin rim, perfect for summer gatherings or a refreshing solo treat.

Ingredients

Scale
  • 1 ½ cups (225 g) frozen pineapple chunks (unsweetened)
  • 2 oz (60 ml) tequila blanco (100% agave)
  • 1 oz (30 ml) fresh lime juice
  • 1 oz (30 ml) triple sec or orange liqueur
  • 1 tsp agave syrup or simple syrup (optional)
  • Tajin seasoning (for rimming)
  • Coarse salt (for rimming)
  • Lime wedges (for rimming and garnish)

Instructions

  1. Prepare the glass rim by mixing equal parts Tajin seasoning and coarse salt on a small plate.
  2. Rub a lime wedge around the rim of your glass to moisten it, then dip the rim into the Tajin-salt mixture, twisting gently to coat evenly. Set aside to dry for a minute.
  3. In a blender, combine frozen pineapple chunks, tequila blanco, fresh lime juice, triple sec, and agave syrup if using.
  4. Blend on high until smooth and slushy, about 30-45 seconds. Add a splash of cold water or more lime juice if too thick; add more frozen pineapple chunks if too thin.
  5. Check the texture to ensure it is thick but pourable with no large ice chunks.
  6. Pour the frozen margarita into the prepared glass.
  7. Garnish with a lime wedge or a small pineapple spear.
  8. Serve immediately to enjoy the icy texture and vibrant flavor.

Notes

Use frozen pineapple chunks for best icy texture; fresh pineapple can be used with added ice cubes. The Tajin rim is essential for a spicy-salty contrast. Fresh lime juice is crucial for brightness. Blend in short bursts to avoid overheating. Adjust sweetness after blending to taste. For a non-alcoholic version, substitute tequila and triple sec with coconut water and extra lime juice.
