Refreshing Frozen Watermelon Margarita Popsicles

These frozen watermelon margarita popsicles are a quick, easy, and refreshing adult treat combining sweet watermelon, tart lime, salty rims, and smooth tequila for a perfect summer indulgence.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1/2 cup (120 ml) tequila blanco
  • 1/4 cup (60 ml) fresh lime juice
  • 23 tablespoons granulated sugar or agave syrup
  • 1 teaspoon salt, plus extra for rimming the popsicle molds
  • 1/4 cup (60 ml) water
  • Optional garnish: thin lime slices or small watermelon chunks

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into chunks. Remove any seeds if necessary.
  2. In a blender, combine watermelon chunks, 1/2 cup tequila blanco, 1/4 cup fresh lime juice, 2-3 tablespoons sugar or agave syrup, 1 teaspoon salt, and 1/4 cup water. Blend until completely smooth, about 45 seconds.
  3. Taste and adjust sweetness or lime juice as needed.
  4. Pour salt onto a small plate. Dip the rims of each popsicle mold into water or lime juice to moisten, then dip into salt to coat lightly.
  5. Pour the watermelon margarita mixture into each mold, leaving about 1/4 inch space at the top. Optionally add a thin lime slice or small watermelon chunk into each mold.
  6. Insert popsicle sticks and freeze for at least 6 hours or overnight until solid.
  7. To unmold, run warm water briefly over the outside of the molds and serve immediately.

Notes

Use fresh lime juice for best flavor. Do not overload tequila to ensure popsicles freeze properly. Rimming molds with salt enhances flavor. For easier unmolding, use silicone molds or run warm water over molds briefly. Variations include adding chili powder to salt rim, fresh mint in the blend, or reducing alcohol for lighter versions.
