Refreshing Frozen Watermelon Margarita Popsicles

These popsicles combine juicy watermelon, zesty lime, and smooth tequila for a refreshing and spirited summer treat that’s quick and easy to make.

Ingredients

  • 4 cups fresh watermelon, cubed (seedless or seeds removed)
  • 1/2 cup (120 ml) tequila blanco
  • 1/4 cup (60 ml) fresh lime juice
  • 1/4 cup (60 ml) simple syrup
  • 2 tablespoons (30 ml) triple sec or orange liqueur (optional)
  • Pinch of sea salt
  • 1 cup (240 ml) ice cubes

Instructions

  1. Cut about 4 cups (600 grams) of ripe watermelon into cubes, removing seeds. Chill the watermelon for best texture.
  2. In a high-speed blender, combine watermelon cubes, tequila blanco, fresh lime juice, simple syrup, triple sec, sea salt, and ice cubes.
  3. Blend on high for about 45 seconds until smooth and slightly frothy. If mixture is too thin, add more ice cubes and blend briefly again.
  4. Taste and adjust sweetness or lime juice as needed, keeping in mind flavors mellow when frozen.
  5. Pour mixture carefully into prepared popsicle molds, leaving a small gap at the top for expansion.
  6. Insert popsicle sticks and freeze for at least 6 hours or overnight.
  7. To unmold, run warm water over the outside of molds for a few seconds and serve immediately.

Notes

For a non-alcoholic version, omit tequila and triple sec and increase lime juice and simple syrup. Adding small watermelon chunks before freezing adds texture. Use ripe watermelon for best flavor. Freeze at least 6 hours for firm popsicles. If no molds, use small paper cups with wooden sticks carefully.
