Instructions

  1. Macerate the berries: In a medium bowl, combine strawberries, blueberries, and raspberries with granulated sugar. Gently toss and let sit at room temperature for about 15 minutes to release natural juices.
  2. Prepare the whipped cream: Chill mixing bowl and beaters in the fridge for 10 minutes. Pour heavy cream into the bowl, add powdered sugar and vanilla extract, then whip on medium-high speed until soft peaks form. Avoid overbeating.
  3. Optional cream cheese layer: Beat softened cream cheese with a tablespoon of powdered sugar and lemon zest until smooth.
  4. Cube the cake: Cut pound cake or angel food cake into roughly 1-inch cubes. Lightly brush with milk or berry juice if dry.
  5. Assemble the trifle: In a trifle bowl, layer one-third of the cake cubes, then spoon a layer of macerated berries with juices, followed by a layer of whipped cream or cream cheese mixture. Repeat layers two more times, finishing with whipped cream on top.
  6. Chill: Cover with plastic wrap and refrigerate for at least 1 hour, up to 4 hours, to meld flavors and soften cake.
  7. Garnish and serve: Just before serving, add whole berries or a sprinkle of lemon zest on top. Serve chilled.

Chill bowl and beaters before whipping cream for fluffier texture. Macerate berries to enhance sweetness and juiciness. Layer gently to avoid crushing berries.
