  • 1 cup (240 ml) heavy whipping cream or whipped topping
  • 1 cup (120 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 package (3 oz / 85 g) blueberry or berry blue flavored gelatin
  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) cold water
  • Fresh blueberries (about 1 cup / 150 g), optional

Instructions

  1. Prepare the Red Jello Layer: In a large bowl, pour 1 cup boiling water over the strawberry or cherry gelatin powder. Stir until completely dissolved (about 2 minutes). Add 1 cup cold water and stir. Pour the mixture into your clear dish. Optionally, scatter fresh raspberries or sliced strawberries evenly on top. Refrigerate for about 45 minutes to 1 hour until firm but still slightly tacky.
  2. Make the Cream Cheese Layer: While the red layer chills, beat the softened cream cheese in a mixing bowl until smooth using a hand mixer or whisk. Gradually add powdered sugar and vanilla extract, mixing well. In a separate bowl, whip the heavy cream or whipped topping until stiff peaks form.
  3. Combine and Spread: Gently fold the whipped cream into the cream cheese mixture until homogenous and fluffy. Carefully spread this creamy layer over the set red Jello. Smooth the top with a spatula. Return to the fridge and chill for another 30 minutes so it firms enough to hold the next layer.
  4. Prepare the Blue Jello Layer: Repeat the gelatin preparation steps with the blueberry or berry blue gelatin powder: dissolve in 1 cup boiling water, stir, then add 1 cup cold water. Let cool to room temperature but do not let it set.
  5. Add Fresh Blueberries: Optionally scatter fresh blueberries over the white layer for bursts of fresh flavor and texture.
  6. Pour the Blue Layer: Slowly and gently pour the cooled blue gelatin over the white cream layer, spreading evenly. Refrigerate for at least 2 hours or until completely set before serving.
  7. Serving Tip: Before serving, let the salad sit at room temperature for 10 minutes so the layers loosen slightly—makes spooning easier.

Notes

Be patient between layers to prevent colors from mixing. Cool gelatin to room temperature before pouring the next layer to avoid melting the cream layer. Use fresh berries for best texture and flavor. Softened cream cheese is key for a smooth cream layer. Whip cream separately for fluffiness. Pour layers slowly and gently.
