  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 4 oz canned diced green chiles (Hatch or similar)
  • 1 cup tomato sauce
  • 2 tbsp Mexican seasoning mix (chili powder, cumin, paprika, oregano, garlic powder)
  • Salt and black pepper to taste
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped (optional)
  • Tortilla chips or sliced bell peppers for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it up with a spatula.
  3. Add finely chopped onion and minced garlic to the skillet. Cook another 4-5 minutes until beef is fully browned and onions are soft.
  4. Drain excess fat from the skillet to prevent greasiness.
  5. Stir in diced green chiles, tomato sauce, Mexican seasoning mix, salt, and pepper. Simmer for 3-4 minutes until sauce thickens slightly.
  6. In a mixing bowl, whisk together softened cream cheese and sour cream until smooth.
  7. Add half of the shredded cheddar and Monterey Jack cheeses to the creamy mixture and stir well.
  8. Fold the warm beef mixture into the cream cheese blend until combined with a layered texture.
  9. Spread the dip evenly in a 9×13 inch baking dish. Sprinkle the remaining shredded cheeses on top.
  10. Bake for 20-25 minutes until cheese is melted, bubbly, and starting to brown.
  11. Let the dip cool for 5 minutes, then garnish with chopped fresh cilantro.
  12. Serve warm with tortilla chips, sliced bell peppers, or crunchy bread slices.

Notes

If cheese browns too fast, tent loosely with foil halfway through baking. For extra crunch, broil 1-2 minutes at the end but watch closely. Let cream cheese soften at room temperature for easier mixing. Drain fat well to avoid greasy dip. Can prepare mixture a day ahead and bake fresh. Variations include swapping beef for turkey, chicken, or vegetarian options.
