  • ½ cup pure maple syrup (Grade A Amber preferred)
  • ¼ cup good-quality whiskey (bourbon recommended)
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons unsalted butter, softened
  • Salt, to taste
  • Black pepper, to taste
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Pat the pork chops dry with paper towels and season generously with salt, black pepper, and smoked paprika on both sides. Let them sit at room temperature for about 10 minutes.
  2. In a small bowl, whisk together the maple syrup, whiskey, Dijon mustard, minced garlic, and apple cider vinegar until smooth. Set aside.
  3. Heat a heavy skillet or cast iron pan over medium-high heat and add the butter. Once melted and sizzling, add the pork chops.
  4. Cook the pork chops for about 4-5 minutes per side, until they develop a golden-brown crust and reach an internal temperature of 145°F (63°C). Use tongs to flip gently.
  5. Reduce heat to medium-low. Pour the maple whiskey glaze into the pan, swirling the chops around to coat them. Let the glaze simmer and thicken for about 3-4 minutes, spooning it over the chops frequently until sticky and glossy.
  6. Remove the pork chops from the pan and let them rest for 5 minutes before serving.

Notes

If glaze reduces too quickly and starts to burn, lower heat and add a splash of water or extra whiskey to loosen it. Use a meat thermometer to ensure pork chops reach 145°F (63°C) for safe and juicy results. Boneless pork chops can be used but watch cooking time closely. For a thicker glaze, simmer longer on low heat while stirring frequently.
