Savory One-Pot Drunken Pasta Recipe with Red Wine Italian Sausage

A comforting and easy one-pot pasta dish featuring Italian sausage simmered in red wine, creating a rich and flavorful sauce that perfectly coats tender pasta.

  • 12 ounces mild or spicy Italian sausage, casings removed
  • 1 cup dry red wine (Cabernet or Merlot recommended)
  • 8 ounces uncooked penne or rigatoni pasta
  • 2 ½ cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, preferably fire-roasted
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon red pepper flakes (optional)
  • A handful fresh basil or Italian parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil over medium-high heat in a large deep skillet or Dutch oven.
  2. Add Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and set aside.
  3. In the same pan, add chopped onion and cook until softened and translucent, about 3 minutes.
  4. Add minced garlic and red pepper flakes, stirring for 1 minute until fragrant. Be careful not to burn the garlic.
  5. Pour in 1 cup red wine, scraping up browned bits from the bottom. Let simmer and reduce slightly for about 2 minutes.
  6. Stir in diced tomatoes with juice, chicken broth, and uncooked pasta. Combine well.
  7. Return cooked sausage to the pot.
  8. Bring mixture to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, for 12-15 minutes until pasta is al dente and most liquid is absorbed. Add more broth or water if needed.
  9. Taste and adjust salt and pepper. Stir in chopped fresh basil or parsley.
  10. Let pasta rest off heat for a couple of minutes before serving to thicken sauce and meld flavors.

Notes

Stir occasionally during simmering to prevent sticking or burning. For creamier texture, add a splash of heavy cream at the end. Toasted pine nuts make a great garnish. Use quality dry pasta like Barilla penne or rigatoni for best results. Can be adapted for vegetarian by substituting sausage with mushrooms or plant-based sausage and using vegetable broth.
