  • 1 garlic clove, minced (optional)
  • 1/2 teaspoon dried Italian seasoning (or blend of oregano, basil, and thyme)
  • Salt and freshly ground black pepper, to taste
  • 1 cup shredded mozzarella cheese (about 4 oz / 115 g; low-moisture variety)
  • 1/4 cup grated Parmesan cheese
  • Optional: sliced pepperoni or cooked sausage bits
  • 1 egg, beaten (for egg wash)
  • Flour for dusting the work surface

Instructions

  1. Prep the veggie cream cheese filling: In a food processor, combine cream cheese, spinach, roasted red peppers, garlic, and Italian seasoning. Pulse until smooth and creamy. Season with salt and pepper to taste. Set aside.
  2. Roll out the puff pastry on a lightly floured surface into a 10×12-inch rectangle about 1/8 inch thick. Rest dough if it resists or tears.
  3. Spread the cream cheese filling evenly over the puff pastry, leaving a 1/2-inch border around edges.
  4. Sprinkle shredded mozzarella and Parmesan cheese evenly over the filling. Add optional pepperoni or sausage bits if desired.
  5. Roll the pastry tightly from the long side like a jelly roll. Pinch edges to seal. Wrap in plastic wrap and chill in the fridge for 15 minutes.
  6. Preheat oven to 400°F (200°C). Unwrap the chilled roll and slice into 12 equal pinwheels about 1/2 inch thick.
  7. Place pinwheels cut side up on a parchment-lined baking sheet, spacing about 1 inch apart.
  8. Brush tops with beaten egg for a golden finish.
