These sliders combine smoky bacon, creamy jalapeño cream cheese, and soft slider buns for a quick, easy, and crowd-pleasing party snack or casual meal.

Ingredients

Scale
  • 810 thick-cut smoked bacon slices
  • 8 oz (225 g) full-fat cream cheese, softened
  • 1/2 cup (60 g) shredded sharp cheddar cheese
  • 1 fresh jalapeño, finely diced (seeds removed for less heat)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of salt
  • Slider buns (soft dinner rolls or Hawaiian slider buns)
  • 3 tbsp (45 g) melted butter
  • Pinch of smoked paprika
  • Fresh chives, chopped (optional)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and let cool. Crumble or chop into small pieces.
  2. In a medium bowl, combine softened cream cheese, shredded cheddar cheese, diced jalapeño, garlic powder, onion powder, and salt. Mix until smooth but slightly textured. Stir in half of the chopped bacon and fresh chives if using.
  3. Slice the slider buns horizontally without cutting all the way through to create a hinge.
  4. Spread a generous layer of the jalapeño cream cheese mixture evenly on the bottom halves of the buns.
  5. Top with the remaining bacon pieces, then close the buns gently.
  6. Brush the tops of the sliders with melted butter and sprinkle with smoked paprika.
  7. Place the assembled sliders on a baking sheet or casserole dish and bake in a preheated oven at 350°F (175°C) for 15-18 minutes until buns are golden and cheese filling is warm and melty.
  8. Let the sliders rest for 5 minutes before serving.

Notes

Do not skip softening the cream cheese for a smoother filling. Adjust jalapeño heat by removing seeds or substituting milder peppers. Cook bacon slowly over medium heat for even crispiness. Brush buns generously with butter for a golden crust. Use a serrated knife to slice buns to avoid squishing. Watch baking time carefully to prevent drying out. Sliders can be assembled ahead and baked just before serving. Leftovers store well in the fridge for up to 3 days and reheat covered at 300°F for 10 minutes.
