Soft Zucchini Cookies with White Chocolate Chips

These soft zucchini cookies combine the moisture of shredded zucchini with creamy white chocolate chips for a comforting, melt-in-your-mouth treat that’s quick and easy to make.

  • 1 ½ cups grated zucchini (about 1 medium zucchini), squeezed dry
  • 1 ¾ cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (175 g) white chocolate chips

Instructions

  1. Grate about 1 ½ cups (150 g) of zucchini using a fine grater or food processor. Place it in a clean kitchen towel and squeeze firmly to remove excess water.
  2. In a large bowl, whisk together 1 ¾ cups (220 g) all-purpose flour, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and ½ teaspoon salt. Set aside.
  3. In another bowl, beat ½ cup (113 g) softened unsalted butter with ¾ cup (150 g) granulated sugar and ¼ cup (50 g) brown sugar until light and fluffy (about 3 to 4 minutes with an electric mixer or 5 minutes by hand).
  4. Beat in 1 large egg and 1 teaspoon vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing.
  6. Gently fold in the drained zucchini and 1 cup (175 g) white chocolate chips. The batter will be thick but moist.
  7. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  8. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the baking sheet.
  9. Bake for 10 to 12 minutes or until edges are lightly golden and centers are set but soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Squeeze zucchini thoroughly to avoid soggy cookies. Avoid overmixing the dough to keep cookies tender. If dough is too wet, add flour tablespoon by tablespoon until scoopable. Pull cookies out when edges are golden but centers still soft; they will firm up while cooling.
