  • 1/4 cup (60ml) fresh lime juice (about 23 limes)
  • 1/4 cup (60ml) simple syrup
  • 2 cups (480ml) club soda or sparkling water
  • Ice (preferably large cubes or an ice ring)
  • Fresh mint leaves (for muddling and garnish)
  • Optional garnishes: plastic spider rings, frozen blackberries, lime wheels, edible flowers

Instructions

  1. Muddle the blackberries: Add blackberries and fresh lime juice to a large pitcher or punch bowl. Gently crush the berries with a muddler or the back of a wooden spoon until they release their juice (about 30 seconds). Leave a few whole berries for appearance.
  2. Add the simple syrup: Pour in the simple syrup and stir to combine. Taste—it should be sweet and tart, like blackberry lemonade.
  3. Pour in the dark rum: Add the dark rum and stir again. Let the mixture sit for a minute to allow flavors to meld.
  4. Add the club soda: Just before serving, pour in the club soda or sparkling water. Stir gently to combine, being careful not to lose too much fizz.
  5. Add ice and garnish: Fill the pitcher with ice, or pour the punch over ice in individual glasses. Garnish with frozen blackberries, lime wheels, mint sprigs, and plastic spider rings.
  6. Serve immediately: Enjoy while cold and fizzy. For parties, prep the blackberry-rum mixture ahead and add club soda and ice just before serving.

For best results, use a good-quality dark rum. Muddling the blackberries is essential for deep flavor. Chill all ingredients beforehand to reduce ice melt.
