These spooky monster eye cupcakes are a fun and easy Halloween treat that looks impressive without requiring a pastry degree. Made with a boxed cake mix and simple decorations, they are a guaranteed crowd-pleaser for both kids and adults.

  • 1 box (15.25 oz) vanilla cake mix
  • Ingredients called for on the box (eggs, vegetable oil, water)
  • 1 teaspoon vanilla extract
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tablespoons heavy cream or whole milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 bag (about 5060) large candy eyeballs
  • 1 tube (4.25 oz) red decorating gel
  • 1 tube (4.25 oz) pink decorating gel
  • 1/2 cup white chocolate melting wafers (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line muffin tin with 24 paper liners.
  2. In a large bowl, combine vanilla cake mix with ingredients listed on the box (eggs, oil, water) and extra teaspoon of vanilla extract. Beat with electric mixer on medium speed for 2 minutes until smooth.
  3. Fill each cupcake liner about 2/3 full.
  4. Bake for 18-22 minutes, until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to wire rack to cool completely.
  5. While cupcakes cool, make buttercream: In a large bowl, beat softened butter on medium speed until light and fluffy (about 2 minutes). Gradually add powdered sugar, one cup at a time, beating on low. Add vanilla extract and salt. Add heavy cream or milk one tablespoon at a time, beating on medium-high until light and fluffy.
  6. Once cupcakes are completely cool, spread a generous layer of buttercream on each, creating a slightly domed shape.
  7. If using white chocolate, melt wafers in a microwave-safe bowl in 30-second intervals, stirring until smooth. Let cool slightly.
  8. Drizzle a thin layer of melted white chocolate over the buttercream on each cupcake, tilting to spread.
  9. While chocolate is still wet, press one large candy eyeball into the center of each cupcake.
  10. Using red decorating gel, draw thin wiggly lines radiating from the candy eye. Use a toothpick to gently drag the gel outward for a feathered effect.
  11. Add a small dot or crescent of pink decorating gel to one side of the candy eye.
  12. Refrigerate finished cupcakes for 15-20 minutes to set the chocolate and gel.

Notes

Do not overbake cupcakes; start checking at 18 minutes. Cool cupcakes completely before frosting. Use a toothpick to draw realistic bloodshot veins. Work in an assembly line for efficiency. Use candy eyeballs with flat backs for better adhesion.
