  • For the Zesty Lime Crema:
  • ½ cup (120ml) sour cream or Greek yogurt
  • Juice and zest of 1 lime
  • 1 tablespoon honey or agave syrup
  • Pinch of salt

Instructions

  1. Pat the chicken wings dry with paper towels. Season lightly with salt and black pepper. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Arrange wings in a single layer on the baking sheet. Bake for 35-40 minutes, flipping halfway through, until skin is crispy and juices run clear. Internal temperature should reach 165°F (74°C).
  3. While wings bake, heat 2 tablespoons olive oil in a medium saucepan over medium heat. Add minced garlic and habanero peppers; sauté for about 1 minute until fragrant, but do not let garlic brown.
  4. Stir in diced mango and honey. Cook for 5-7 minutes, stirring occasionally, until mango softens and mixture thickens. Break down mango chunks slightly, leaving some texture.
  5. Remove from heat and transfer mixture to a blender or use an immersion blender to puree until smooth but still thick. Stir in fresh lime juice and season with salt to taste.
  6. Once wings are done, place in a large bowl and pour the sticky mango habanero glaze over them. Toss gently until every wing is well coated and glossy.
  7. In a small bowl, whisk together sour cream or Greek yogurt with lime juice, lime zest, honey, and a pinch of salt until smooth and creamy. Adjust sweetness or acidity to taste.
  8. Arrange wings on a platter with the lime crema in a small bowl for dipping. Add lime wedges on the side.

Pat wings dry to ensure crispiness. Adjust habanero quantity to control heat. If glaze thickens too much, gently warm before coating wings. Baking is preferred for sticky wings but frying before glazing adds extra crunch. Lime crema can be made dairy-free using coconut yogurt. Leftovers keep well refrigerated for up to 3 days and reheat at 350°F to maintain crispiness.
