This cake has all the cozy, spiced flavor of apple cider donuts without the fuss of frying. It’s dense and tender with a crackly cinnamon sugar crust, made from simple pantry ingredients.

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • ¼ cup unsalted butter, melted (for crust)
  • ½ cup granulated sugar (for crust)
  • 1 ½ teaspoons ground cinnamon (for crust)

Instructions

  1. Reduce the apple cider: Pour 2 cups apple cider into a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until reduced to about ½ cup (15-20 minutes). Set aside to cool completely.
  2. Preheat oven to 350°F (175°C). Generously grease a 10-inch Bundt pan with butter or non-stick spray, dust with flour, and tap out excess.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy (3-4 minutes).
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. With mixer on low, add dry ingredients and buttermilk alternately: one-third dry, half buttermilk, another third dry, remaining buttermilk, then last of dry. Mix just until combined.
  7. Gently fold cooled cider reduction into batter with a rubber spatula.
  8. Pour batter into prepared pan and smooth top. Bake for 45-50 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  9. Cool cake in pan on a wire rack for 15 minutes, then invert onto rack and cool completely.
  10. While cake cools, melt ¼ cup butter in a small bowl. In another bowl, whisk together ½ cup sugar and 1½ teaspoons cinnamon.
  11. Once cake is completely cool, brush entire surface with melted butter. Sprinkle cinnamon sugar mixture generously over buttered cake, turning to coat all sides.

Notes

Don’t rush the cider reduction; low and slow prevents scorching. Use room temperature ingredients for best rise. Grease the pan thoroughly to prevent sticking. Let cake cool completely before adding cinnamon sugar crust. If cake browns too quickly, tent with foil for last 10 minutes.
