  • 1 ½ cups graham cracker crumbs (about 10 full sheets)
  • ⅓ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz (450 g) cream cheese, softened to room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons fresh lemon zest (about 1 lemon)
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • ½ cup huckleberry jam or preserves
  • Optional: ¼ cup fresh or frozen huckleberries

Instructions

  1. Preheat your oven to 325°F (163°C). Grease an 8×8 inch pan or line it with parchment paper with overhang for easy removal.
  2. Make the crust by combining graham cracker crumbs, melted butter, and sugar in a medium bowl. Stir until evenly moistened and press firmly into the bottom of the pan.
  3. Bake the crust for 8-10 minutes until lightly golden and toasty. Let cool slightly but keep the oven on.
  4. In a large bowl, beat the softened cream cheese with a mixer on medium speed until smooth and creamy (2-3 minutes). Scrape down sides to avoid lumps.
  5. Add sugar and beat until fully incorporated.
  6. Add eggs one at a time, beating just until combined after each addition to avoid overmixing.
  7. Mix in lemon zest, lemon juice, and vanilla extract.
  8. Fold in sour cream gently with a spatula until mixture is silky and uniform.
  9. Pour half of the cheesecake filling over the baked crust and smooth evenly.
  10. Drop spoonfuls of huckleberry jam over the filling and swirl gently with a butter knife or skewer to create marbled patterns.
  11. Pour remaining cheesecake filling on top and smooth the surface. Optionally add more jam dollops and swirl.
  12. Bake for 40-45 minutes until edges are set but center jiggles slightly when shaken.
  13. Cool completely on a wire rack for about an hour, then refrigerate for at least 4 hours or overnight.
  14. Slice into bars using a warm knife (run under hot water and dry before slicing) for clean edges.
